Peter, Peter, Pumpkin eater!
I freaking love pumpkin, and lucky for me, so does my husband, so during the season when pumpkins become available, we have pumpkin muffins, pumpkin pies, pumpkin stews, and all kinds of pumpkin things. I even stock up on pumpkin scented candles so we can have that joy going on all year long. It is the only candle I can light that the hubs doesn’t crinkle his nose at when I burn for a while.
Anyhoo, pumpkin is not only super delicious, but it is also pretty darn good for you. A whole can of pumpkin is just about 150 calories, and it is even freakishly good for your dog!
Here are a few different ways to use canned pumpkin to satisfy all your seasonal pumpkin cravings:
Pumpkin shake: Just put canned pumpkin and pumpkin spices in a blender with vanilla ice cream and blend!
Pumpkin ravioli: Mix pumpkin with some heavy cream and some savory spices, then stuff some pasta with the mixture and top with olive oil and Parmesan!
Pumpkin latte: Heat your cream of choice with a few tbsp. of pumpkin, just long enough to get it hot. Take it off the heat and add pumpkin spices and the sweetener you prefer, then either blend, froth, or whisk your cream mixture enough to give it a little foam. Pour this over a cup of coffee!
Pumpkin butter: Pour your pumpkin in a pot, then stir in some brown sugar, apple cider, and pumpkin pie spices and let it simmer for about half an hour. Once it cools, you will want to spread it on everything!
