Avacado Cucumber Salad

  • Balsamic Vinaigrette:
  • 1 tbs honey
  • 1/2 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1 tsp ground mustard
  • 1 clove garlic, finely minced
  • pinch salt
  • pinch pepper
  • 1 tsp basil, chopped finely
  • Salad:
  • 2 cucumbers, diced
  • 3 roma tomatoes, diced
  • 1/3 yellow onion, diced
  • 1/2 cup crumbled feta
  • 1/4 cup sunflower seeds
  • 2 avocados, diced
  • Extra sunflower seeds for garnish, optional


In a large bowl, combine all vinaigrette ingredients and whisk until honey is dissolved. Set aside.
In another large bowl, add all salad ingredients and toss. Pour your vinaigrette over the top, and toss everything together. Garnish with extra sunflower seeds! Yep, that is it!
If you want to be extra fancy, save your avocado shells and serve it up in that!
