Bacon Avocado Grilled Cheese

We had you at bacon, but keep you with the avocado and the cheese! This monster sandwich is share worhty for sure!!!

  • avocado (1 per 2-4 sandwiches, depending on how big your bread is and how much you like avocado!)
  • bacon (see advisory above)
  • ancho chile powder, 1/8 tsp per avocado
  • garlic powder, 1/8 tsp per avocado
  • red pepper, small pinch per avocado
  • salt and pepper to taste
  • butter, 1-2 tbsp per sandwich
  • sourdough bread, sliced
  • 2 slices aged swiss
  • 1 slice gouda


In a bowl, mix your avocado, ancho chile powder, onion powder, red pepper, and salt and pepper and set aside. Also, go ahead and fry your bacon and set it aside. Melt your butter in the pan, or spread it on your bread, depending on your favorite method. Put your slices of bread in the pan on medium heat and immediately add a slice of swiss to each slice of bread. Assemble the rest of your sandwich by adding some of your avocado to one side and bacon to the other. Add your slice of gouda to top the bacon. When the swiss cheeses start to melt, flip your avocado half onto the other half. Continue to cook over low/medium heat until your cheese is melted and your bread is golden brown!
