  • 1 lb brussel sprouts
  • olive oil
  • ½ white onion, chopped
  • 2 cloves garlic, diced
  • heavy pinch of salt, or salt to taste (depending on the type of bacon, you may want to ease up)
  • 3 slices bacon, chopped (we used 3 tablespoons of bacon pieces, which can be purchased in the grocery section)
  • 1/3 cup water

Rinse your sprouts, then cut the woody end from each sprout. Leave the small ones be, but cut the medium sized ones in half, and the large ones in fourths. In a large pan, pour enough olive oil into your pan to lightly coat the bottom, then heat the pan to large. Add your onion and garlic to your pan and let cook for about a minute. Then, add your chopped brussel sprouts to your pan and toss. Let simmer for about 2 minutes, then add your bacon. Let simmer for an additional 5 minutes, or until your brussel sprouts begin to have a sear. Reduce heat, then VERY CAREFULLY and slowly, add your water to your pan. Turn to medium heat, and let simmer until your water cooks out, around 5 minutes. Turn back to medium high and stir fry for about a minute. Remove from heat and eat 'em up!
