Banana Bread

  • Banana bread
  • 2 cups flour, all purpose
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup butter (if you want it to be healthier, you can replace half with apple sauce)
  • ¾ cup brown sugar, packed
  • 1 tablespoon vanilla
  • 2 eggs
  • 4-5 medium overripe bananas , mushed up (don’t worry if you use a little bit more or less on this one)
  • ¾ cup chopped walnuts or 1 cup chocolate chips, optional


Preheat oven to 350. Grease a 9x5 inch loaf pan. In one bowl, cream your butter with a hand mixer. Add in brown sugar and vanilla and mix again. Add in eggs and bananas and hand mix until just combined. In another bowl, combine your flour with your salt, baking soda, and cinnamon to combine them. Add your walnuts or chocolate chips now if you are going to add them. Next, add your banana mixture to your flour mixture and stir until just combined. Don’t over mix or your bread will be too dense. Bake for 55-60 minutes or until a toothpick would come out clean. Test in a few places if it doesn’t to make sure you didn’t just hit a chunk of banana.

This recipe makes one 9x5 loaf or 12 muffins. My husband likes them served warm with a little butter. :)
