Beer Cheese Soup

This is a thick, creamy soup that is packed with our two of our favorite flavors, beer and cheese! Great for a cold day or a dinner in, this will become a go-to soup for you!

  • 1/3 cup butter or margarine
  • 1 cups diced onion, chopped
  • 1/2 cups diced celery
  • ½ cups carrot
  • 2 cloves garlic
  • ½ teaspoon red pepper flakes
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 2 cups chicken broth
  • 1/2 cup flour
  • 1 tbs Worcestershire sauce
  • 2 tbs dejain mustard
  • 2 cups milk
  • 2 cups half and half
  • 6 cups shredded sharp Cheddar cheese
  • 12 oz beer
  • chopped parsley for garnish
  • popcorn or bread, optional


Put a large pot on medium high heat and add your butter. Once it is nearly melted, add your onions to the pot. Use a food processor to chop your celery, carrot, and garlic and add to your butter. Season with salt, pepper, and red pepper and let cook for a few minutes to soften. Add your chicken broth and flour and whisk, then bring to a simmer, stirring often. It should get very thick. Add your worchestershire sauce, mustard, milk, and half and half and bring to a very light simmer, stirring frequently. Stir in your beer and stir, then slowly add your cheddar one handful at a time while stirring. Once your cheese is melted, you are ready to serve it, so bust out your bread or popcorn and go to town!
