  • 2 cans black beans
  • 1 cup green onion
  • 1 tablespoon garlic (two large cloves), roughly chopped
  • ½ teaspoon oregano
  • 2 tablespoons cilantro leaves, roughly chopped
  • 1 egg
  • ½ teaspoon red pepper flakes
  • ½ cup plain bread crumbs
  • Salt and pepper to taste
  • Wholewheat hamburger buns
  • Pico de gallo or salsa of your choice

In a food processor combine all ingredients except the second can of black beans. Pulse until ingredients are combined but not a paste. Pour into a bowl and fold in the second can of black beans. If mixture is still too wet add more breadcrumbs ¼ of a cup at a time.
Spray cooking spray into a medium sized frying pan and turn on medium high heat. Once hot put in the burgers. You won’t have to cook these long, about five minutes, you are just actually warming up everything. Place burger on bun and top with your salsa or if you have extra calories to spare, a piece of monteray jack cheese!

For vegans wanting to enjoy these burgers, don’t add the egg. The egg is used to combine everything once it gets hot. You can actually omit the egg and not process everything all the way.
