Breakfast Quiche

Nothing says "Good Morning," like a breakfast quiche! This one is not only super delicious, but also easier than you think!

Ingredients

  • 8 oz breakfast sausage
  • 1 pre-made refrigerated pie crust
  • 1 tsp olive oil
  • 1 cup cheddar cheese, shredded
  • 2 tbs all purpose flour
  • 1 jalapeno, guts removed, diced
  • ½ cup mushrooms, roughly chopped
  • 5 eggs
  • ½ cup milk
  • 1 tsp salt, or to taste
  • 1 tsp pepper, or to taste
  • pinch of red pepper

Directions

Preheat your oven to 350. Brown your breakfast sausage and set to the side. In a pie pan, lay out your refrigerated pie crust. Pour in your olive oil and rub it around the bottom of your crust, making sure it is touching the bottom. Sprinkle half your sausage into the crust. Mix your cheddar with your flour, then sprinkle half of it into your pie crust. Also, add half your jalapenos and mushrooms to the crust. In a medium bowl, whisk your eggs, milk, salt, pepper, and cayenne pepper for 2-3 minutes. Dump the rest of your sausage, cheese, jalapenos, and mushrooms into your egg mixture and mix. Pour it evenly into your pie crust. Crinkle your pie crust edge inward toward the center without it touching the egg mixture (watch the video if that is confusing, or watch it anyway because it is funny.) Put it in the oven for 30-35 minutes, turning around nearly halfway through if your oven tilts at all, or you will have one side of your quiche with way more sausage than the other. At the end of your time, you should be able to wiggle your quiche without it looking wet and jiggling in the center. Let it cool for 5 minutes before serving, but don't worry, it won't last long!
