Chicken Curry with cilantro-lime rice

Here is a Mild yet flavorful easy curry with equally delicious rice!

  • For curry:
  • 1 can unsweetend coconut milk
  • 2 tablespoons sweet or mild curry powder
  • 3 clove garlic, minced
  • salt and pepper to taste
  • For Chicken
  • 8-10 boneless chicken thighs, skin and excess fat trimmed off
  • 2 tablespoons sweet or mild curry powder
  • 2 tablespoons peanut butter
  • 1 lg onion, roughly chopped
  • 1 tablespoon olive oil
  • For rice:
  • 1 package basmati rice or rice of your choice
  • juice of 1 lime
  • 1 cup of chopped cilantro


Cook rice according to package directions
In a large sauce pan over medium high heat, heat coconut milk, garlic and curry powder until warm. Be careful with the coconut milk as it will thicken the longer it is on the heat.
In a large saute pan use 1 tablespoon of oil to coat pan. Once oil shimmers, turn heat down and add chicken. Season with curry powder and salt and pepper. Brown chicken on all sides and then add peanut butter. Make sure peanut butter coats all the chicken. Add your rough chopped onions and pour curry sauce over. Cover and continue to cook until chicken is done. 10-15 minutes.
Once rice is done add lime juice and cilantro and mix well.
Put rice on a plate and add as much chicken curry as you want! (you are an adult after all!)
