Egg in a Basket

French toast meets fried eggs meets egg sandwich.

  • For each serving:
  • 1 slice bread
  • 1 egg
  • butter as needed for frying
  • salt and pepper to taste
  • cheese for topping, if you wish


Take a small cup or a cookie cutter (this can get really cute if you have awesome cookie cutters) and remove a section from the center of the bread and set aside. Heat your skillet to medium and melt enough butter to fry bread. Place the bread in the skillet and place a little extra butter if needed in the center for frying the egg. You can put the bread center in the pan off to the side so you can serve it on the side of your egg in a basket. Crack egg into center of bread, being careful to try to keep the egg contained within the bread. Salt and pepper this side as desired while cooking. Once the egg starts to loose its translucency and you feel it can be flipped, use a large enough spatula to get under the whole slice of bread and carefully turn the egg and bread. Once this starts cooking, you can top with cheese if you wish so it will be melted by the time the whole thing gets finished.
