  • 2-3 tbs olive oil
  • 2 cloves garlic, minced
  • 1/2 white onion
  • 1 cup each of your favorite stir fry vegetables
  • suggested: peas, cabbage, julienned carrots, and bean sprouts
  • 2 green onions, diced
  • 2 tbs soy sauce + to taste
  • 2 eggs
  • 5 cups steamed rice
  • salt and pepper to taste

Pour your olive oil into a wok or large pan and turn it on medium high. Add your garlic and onions and stir fry for about a minute. Add the rest of your vegetables and stir fry until onions are translucent and all your vegetables seem to be cooked all the way through. Crack your eggs into a bowl and break the yolks, but do not scramble. Push your vegetables to one side and if there is no sheen from olive oil, add just enough to lightly cover your empty spot. Pour in your eggs and fry them, stirring occasionally. Once eggs are throughout cooked, stir them with the other veggies. Check to make sure your pan still has a very light sheen of oil, add if needed, then add in your rice and stir, breaking up any rice balls. Once mixed well, add in salt, pepper, and extra soy sauce to taste.
