Hummus Crusted Chicken

This chicken dish is proof that healthy and delicious can go hand in hand! We use hummus to make a delicious coating, leaving the most moist, flavorful chicken you have ever had!

  • Cooking spray
  • 3 large or 4 medium sized chicken breasts
  • Salt and pepper
  • 2 lemons, one for juice and one for garnish
  • 1 tbsp balsamic vinegar per breast
  • paprika
  • 1/3 cup hummus per breast


Preheat oven to 425. Spray a baking dish with cooking spray. Sprinkle each breast with salt and pepper, then place in chicken breasts into dish. Squeeze juice from one half of a lemon onto your chicken. Pour on your balsamic vinegar, then squeeze the other half of the first lemon onto your chicken. Sprinkle each breast with a heavy pinch of paprika. Top each breast with about 1/3 cup of hummus, then spread it around to cover. Sprinkle each breast with another heavy pinch of paprika. Slice second lemon into thin slices, then top each breast with two slices. (Watch video for a visual reference). Sprinkle a heavy pinch of pepper over entire dish.
Bake at 425 for 30+ minutes, depending on the size of the breasts, or until the internal temperature is 165. It took us about 30 minutes for perfectly finished chicken.
