Marry Me Scrambled Eggs

This may seem like a super simple one, but for some reason, most people don't make great scrambled eggs.

  • 2 large eggs
  • 1/8 cup milk
  • ¼ cup shredded sharp cheddar
  • salt
  • pepper
  • cooking spray


In medium bowl, crack eggs and beat thoroughly. Add milk and continue to beat. You will want to beat these for a little longer than you would consider necessary. Add ½ cheddar cheese and salt and pepper and whisk again. Spray a medium skillet and set on medium heat. Do not let it heat much before you add your eggs. Once your eggs are in the skillet, let set until you can almost not see through the eggs to the skillet. Do not whisk around, simply scrape the bottom of your pan with your spatula. Too much scrambling at this point turns them to an almost gritty texture, but too little just leaves you with huge chunks of done eggs. Once you can't see through to the bottom of the pan again, give them another light stir, trying not to chop up any of the egg. Once they are almost finished, sprinkle on the remaining cheese, leaving just a pinch for garnish. Continue to lightly turn your eggs until the cheese melts. Plate them and garnish with last pinch of cheese.
