Mashed Cauliflower

You will never again miss mashed potatoes with this mashed cauliflower! It is so creamy, thick, and all around delicious!

  • 1 head of cauliflower
  • 2-3 cloves garlic
  • 2 oz cream cheese
  • Salt and pepper to taste


Cut cauliflower into florets, aka, cut it off the stems. Fill a large pot with water and add a heavy pinch of salt. Bring water to boil. Add cauliflower and garlic to water and let it boil for 10-15 minutes, or until a piece of cauliflower will easily mash. Drain all water, and then press more water out with a paper towel, because the cauliflower will have absorbed a lot of water, which will make your cauliflower runny if you don’t press it out. (You may want to wait a sec to do this, because your cauliflower will be hot!) Pour your contents into a food processor or blend with a blender for a creamed texture, or hand mash for a more chunky texture. Add your cream cheese and salt and pepper to taste and blend well. That is it! Pour out your contents into a bowl and enjoy!!!
