Mason Jar Whiskey Cakes

Holy chocolaty whiskey goodness in a cake, Batman!

  • cake:
  • 10 tbsp butter (1 stick and 2 tbsp)
  • 10 oz semi sweet chocolate chips
  • 1 cup light brown sugar
  • ½ cup Irish whiskey, or whatever whiskey you prefer
  • 5 eggs
  • ½ tsp salt
  • 1 teaspoon baking powder
  • nonstick cooking spray
  • icing:
  • 6 oz unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 ½ cups powdered sugar, sifted (up to 3 cups if you like really sweet icing)
  • 2 tbs whiskey
  • green food coloring, if desired


Preheat oven to 350. Melt chocolate and butter together, then stir in sugar. Once sugar starts to dissolve, slowly add whiskey and set aside. In a large bowl, add your eggs, salt, and baking powder and stir well, then slowly incorporate chocolate mixture, not too quickly so that the eggs don't cook. Spray into your mason jars and pour your cake in. You only want your jars to be about 1/4 to 1/3 full, because they will rise a lot. Place them on a cookie sheet, then place them in the oven for 30-35 minutes. They should have risen and fallen, and a toothpick should come out clean. If not, put back in the oven for 5 minutes. Set them to the side to let them cool.

Put all your icing ingredients in a large bowl and mix with hand mixer until smooth. If you prefer a sweeter icing, feel free to add more powdered sugar.

Once your cakes have cooled, ice your cakes and there ya go! :D
