Mini Taco Salad

Taco Salads are great... but MINI Taco Salads are epic! Everyone loves taco salads, and now they can have their own... or two! These are super easy, unique, and best of all, delicious!

  • Shells:
  • 1 bag white corn tortillas
  • oil, corn or vegetable
  • salt to taste
  • lime and other seasonings, optional
  • Filling:
  • Go crazy with whatever you want! Suggestions:
  • re-fried beans
  • ground beef
  • lettuce
  • diced tomatoes
  • cheddar
  • sour cream
  • cilantro
  • green onions
  • salsa


Fill a medium sized pan with 3 inches of oil and turn on heat to medium to medium high. You will want to have a few inches of space in the top of the pan for spill over. Once your oil is hot, take a tortilla and place it in. If it very lightly starts to bubble, your oil is just right. If it is bubbling furiously, your oil is too hot. Once you are at the right temperature, place a tortilla in the oil, then immediately take either a stainless steal ladle or a long handled whisk and place it in the center of the tortilla, pushing it to the bottom. The tortilla should wrap itself around the utensil. Hold here for 20-30 seconds, or until the shape seems to hold. Let cook in the oil for about a minute, then remove to a paper towel or cooling rack. Immediately season with salt and any other dry seasonings you chose.
If you decide to make lime flavored tortillas, slice a lime in half and squeeze about 1/2 tsp on each side and spread around. Let it dry until it is not dripping, then follow the same directions as earlier with the oil. If you want a stronger lime flavor, use more lime, but allow it time to dry.
Now it is time to fill it! Go crazy with beans, beef, lettuce, and whatever you would like! Yum!!!
