Pico De Gallo

  • 3 medium tomatoes
  • 1 medium yellow onion
  • 1 large jalapeno
  • 1 lime
  • 1 cup loosely packed diced cilantro
  • 2 cloves garlic
  • salt and pepper to taste


Dice 3 medium tomatoes and put in large bowl with cilantro. Dice yellow onion and add to tomato mixture. Cut head off jalapeno and slice in half. Remove seeds and guts (the guts and seeds have most of the heat, so keep a little if you want more heat, get rid of all the guts if you don't like a whole lot of heat. Don't touch your eyes after this! Ouch!). Chop jalapeno into small pieces and add to tomato mixture. Shell garlic and cut off woody ends, then mince and add to tomato mixture. Cut lime in half and squeeze juice over mixture. Add salt and pepper to taste. Try this and see if there was enough lime. If you would like more, go for some of the second half.
Serve with tortilla chips, as a condiment, or as a side! The colors of this are really pretty and add to any dish... well... not any dish... you get the point.
