Pumpkin Parfait

For a fresh take on pie, make a parfait! This one combines pumpkin and cheesecake, so how can you go wrong? Not only are they a table decoration on their own right, but they are ridiculously delicious!

Ingredients

  • 4 oz cream cheese
  • tbs sugar
  • tbs milk
  • 1 ½ cups whipped cream
  • 2 - 3.4 oz vanilla instant pudding mix
  • 1 15 oz can canned pumpkin
  • 1 tbs pumpkin spice
  • 5-6 graham crackers, crushed
  • extra whipped cream
  • holiday sprinkles (optional)

Directions

In medium large bowl, blend with a mixer your cream cheese, sugar, and milk. Add your whipped cream and mix, then set aside.
In another bowl, add your pudding mix to a bowl and add a cup of milk and mix with mixer. Then add pumpkin to bowl and mix. Add pumpkin spices and mix.
Put your graham crackers in a bowl so they will be handy to grab. Take plastic bags or piping bags and cream cheese mixture to one bag and pumpkin mixture to another bag. Cut a hole in the corner so you can pipe it into your glass.
Take cocktail or dessert glass and pipe layers of pumpkin, cream cheese mixture, and graham crackers. At the end, spoon on whipped cream and sprinkle with sprinkles or graham crackers. Pretty!
