Pumpkin Waffles

Pumpkin waffles are a great way to ring in the fall, celebrate the holiday season, or just satisfy your craving for pumpkin pie!

Ingredients

  • Pumpkin Waffles:
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • ¼ cup granulated sugar
  • 1/3 cup packed dark brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 2 large eggs
  • 2 cups milk
  • 1 tablespoon vanilla
  • 1 cup pure pumpkin
  • 3/4 stick butter, unsalted and melted
  • cooking spray
  • Chai Glaze:
  • 2 teabags
  • 1 1/2 cup super hot water
  • 1 1/2 tablespoons butter
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1 pound powdered sugar

Directions

Alternate version: omit first 4 ingredients with 2 ¾ cups pancake mix
Mix dry ingredients in a large bowl. In a separate bowl, mix together all other ingredients. Pour your wet ingredients into your dry bowl and mix until just combined. Let set for 5 minutes, or until your waffle iron fully heats up. Spray your waffle iron and cook your waffles.

For glaze, steep your teabags in hot water for about 5 minutes. Pull out the teabags and add the butter to the hot water until it melts. Add vanilla and cinnamon and mix it. Add powdered sugar and mix until absorbed.
