Steak, Egg and Cheese Bagels

- 1 steak (bottom round)(any steak would work, the bottom round is cheaper though)
- ¼ sweet yellow onion
- 2 eggs
- 2 pieces of your favorite cheese
- 2 bagels(whatever flavor, I find that plain is best)
With a meat mallet (English lit book, shoe or other hard heavy object) pound the meat until tender (maybe 4 or 5 whacks on each side)(the bottom round is tough so put some muscle into it!)
Season your meat with salt and pepper to taste and turn your skillet to medium high heat. Cook steak on each side until golden brown (4-5 minutes). Beat eggs and season with salt and pepper if you desire. Turn heat on high and spray the pan with cooking spray or a tablespoon of butter. You can clean the pan after the meat is done but the seasoning from the meat makes the eggs that much better!
Once the eggs are in turn heat to medium and cook them omelet style (that means no scrambling!)
Start to toast your bagels. Chop onions however you like them! Once the eggs and bagels are done you can assemble the sandwich. I personally put mayo on one side of the bagel then the eggs + cheese, onion then the steak. Top it with the other half of the bagel! You can arrange it however you feel your experience should be!
