Strawberry Basil Bruschetta

- 1/2 cup balsamic vinegar
- 1 soft french loaf
- 2 tbs butter + more as needed
- 2 tbs olive oil + more as needed
- 1 lb Strawberries
- 3 tbs Fresh Basil
- 2 tbs Fresh Mint
- 5 oz goat cheese
- 2 tbs olive oil
Bring balsamic vinegar to a boil, then reduce heat and let it simmer until it is reduced by half, leaving you 1/4 cup, stirring occasionally. Set aside.
In a large bowl, mix together all ingredients called for in the toppings category and set aside.
Cut your loaf of bread into 1" slices, diagonally and set aside. Melt 2 tbs butter and 2 tbs olive oil in a large pan, then pour the butter mixture into a bowl. Brush some of the butter mixture onto one side of each piece of bread. Once they are all brushed, place bread a few pieces at a time butter side down on your pan only browning the butter side on each slice of bread. If it looks like you don't have enough butter/olive oil, make a little more. Once your bread has been browned on one side, scoop some of your strawberry mixture onto the browned side of each slice of bread. Drizzle each piece with your balsamic vinegar. Get ready for the high fives you are about to get from your friends!
