Stuffed Pork Chops

What is better than a pork chop? A stuffed one in it's own gravy...

  • 4 thick cut pork chops
  • 3 tbs olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbs chopped basil
  • 1 cup croutons
  • 1 1/2 cups chicken broth
  • 2 tbs corn starch
  • Salt & pepper to taste


Cut a slit into the meatiest side of each chop. Sprinkle inside and out with salt and pepper and set to side. Heat about 2 tbs of olive oil in pan and add onions and garlic. Saute until onions are translucent. If pan is dry, add a drizzle of olive oil, but not enough to soak croutons, then stir in croutons and basil. Stuff pork chops with mixture and hold closed with a toothpick. Wipe out the pan to get rid of crumbs, then add about a tbs of oil until medium hot. Add remaining 1 Tbsp oil to skillet; heat over medium-high heat. Add in chops and let cook on each side for about 3 minutes. Add 1 cup of your chicken broth and bring to boil. Reduce heat and cover. Cook for 25 minutes, turning halfway through. In another bowl, stir 1/2 cup chicken broth and corn starch. Slowly add to skillet, then bring to boil for 1 minute. Remove from heat and serve it!!!
