- 2 cups almonds
- ¼ cup honey
- 1 orange for 2 tsp orange zest and 1 tbs orange juice
- 1 ½ tbs cinnamon
- ½ tbs nutmeg
- 1 cup dried apricots
- 1 cup dried dates
- ½ cup dried figs
- ½ cup dried cherries or cranberries
- 1 cup confectioners sugar or granulated sugar
If your almonds are whole, roast them in the oven at 400 degrees for 10 minutes, then let them cool. If using sliced almonds, only roast them for 3-5 minutes, or skip it. We recommend roasting, though.
In a food processor, chop your almonds then dump them into a large bowl. Add your honey, orange zest, orange juice, cinnamon, and nutmeg to bowl and fluff. Add your apricots and dates to your food processor until finely chopped, then add them to the bowl. Add your figs and cherries to food processor until finely chopped, then add those to the bowl as well. Mix well, using your fingers toward the end. You can chill the mixture to make it easier to ball or go ahead and make the mixture into 3/4 inch balls. On a plate, sprinkle out sugar of choice. Roll the balls in the sugar and they are ready to eat! You can refrigerate them for up to a month.
