Watermelon Salad

This sounds like an odd combo, but is an amazing way to serve watermelon!

  • ¼ of a watermelon
  • 3.5 oz of goat cheese (unseasoned)
  • ½ cup of mint leaves
  • ¼ teaspoon of salt
  • ½ tablespoon of olive oil


Cut watermelon into cubes and season with olive oil and salt. Cut goat cheese into cubes and add to watermelon. Strip 10-15 mint leaves from stem and roll together(like a burrito). Cut leaves (they will come out in strips)and add to watermelon and goat cheese. Stir everything together and put in fridge to chill about 15-20 minutes!
